"This is not quite my Italian g'ma's eggplant parm. She would salt the eggplant to remove any bitterness..rinse and then bread in flour, egg, and Italian breadcrumbs and fry in olive oil...Then place in a casserole and make layers of eggplant, marinara, moz - ending with a layer of mozz and a good sprinkling of parm...I have tried using the newer method of baking the breaded eggplant but it's just not the same...."

"Every Italian family has their own version of Pasta Fazool which is macaroni and bean soup. Olive Garden's version to me ( yes, I am Italian) is more of a minestrone . Typically, you use pancetta or butcher cut thick bacon to flavor the broth. I made my version last night and it really is better the next day. I am not trying to be overly critical but my version is more like the one posted on Food and Wine magazine some time back. Good stuff! I also use the Italian blend seasoning if you don't have all the indivdual ones. No celery in mine... cannellini beans , broth carrots, onion , garlic etc. You enjoy whatever you like ..Mangia bene!"
