With just the right amount of sweet and savory, along with a great crunch throughout, this Golden Raisin Broccoli Salad is sure to be the highlight of the potluck menu this summer. Made with bacon, Cheddar cheese, red pepper, almonds and of course broccoli, among other ingredients this is one broccoli salad recipe that is anything but ordinary. Top it all off with a sweet, creamy and tangy dressing that comes together in just 3 ingredients. Regardless how you feel about salad, this is one of those recipes that will keep you coming back for more. There's just way too much to love in this broccoli salad for anyone to say, "no thank you."

Ingredients

  • Ingredients for Dressing
  • 3/4 cup mayonnaise
  • 1/4 cup granulated sugar
  • 1 tablespoon balsamic vinegar
  • For the Salad
  • 1 pound fresh broccoli, chopped into small, bite-sized pieces, blanched.
  • 1 cup golden raisins
  • 3/4 cup sliced, almonds
  • 1 small shallot, finely diced
  • 1 cup shredded sharp Cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1 red pepper, thinly sliced

Instructions

  1. In a small bowl, whisk together all of the dressing ingredients. Set aside.

  2. In a large bowl, toss the salad ingredients together. Pour the dressing over the broccoli mixture and toss to coat all the ingredients with the sauce.

  3. Chill in the refrigerator for at least 2 hours before serving. Right before serving, give the salad another good toss to recombine any dressing that may have settled at the bottom.

This deli salad has such a great variety of flavors and textures in it, that it would pair well as a side dish to any grilled meat. Perfect for backyard barbeques when a lettuce salad might wilt in the summer heat. I love that the broccoli is blanched - this takes a lot of the green rawness out of it, and makes it more pleasing to the tooth!

This sounds wonderful. Not being a raisin fan I am going to try it with craisins instead.

I like that this golden raisin and broccoli salad is a cold salad and uses raw broccoli. Broccoli is so much better for you if you do not cook it. (kinda defeats the purpose with the mayo used) This is a great way to get more broccoli in your diet.

I never face a challenge getting my children to eat their veggies. However, it is nice to present them in a different fashion from time to time. This recipe sounds yummy, to say the least.

I love how colorful this salad is and really think that raisins and broccoli compliment each other so well...I could have this often. Grilled chicken or turkey would be such a nice addition as well as the bacon if you're looking for a more hearty meal and I'd even throw in some grape tomatoes and boiled eggs too!

This looks like a delicious salad. I'm definitely going to try it. I love the fact that there are almonds in it. I think pecans would be a nice substitute to use as well. The bacon will definitely seal the deal with this salad. Broccoli is a super food and I try to eat lots of it so I am looking forward to trying something new with the salad!

This is very similar to a broccoli salad that my great aunt used to make! I'll have to give this a try to see how similar it actually is )
