Olive Garden Oven Roasted Potatoes

Olive Garden Oven Roasted Potatoes is a hearty roasted potatoes recipe with fresh herbs and cheese. They're quick to make and can be paired with practically any main dish. No need to go to Olive Garden when it's so simple to do at home!

Ingredients

  • 2 medium baking potatoes
  • 4 tablespoons olive oil
  • 1 medium green pepper
  • 1 medium red pepper
  • 1/2 teaspoon salt
  • 2 teaspoons fresh rosemary, chopped
  • 1 teaspoon fresh garlic, minced
  • 4 teaspoons fresh parsley, chopped
  • 1/2 cup Romano cheese grated
  • pepper, to taste

Instructions

  1. Preheat oven to 450 degrees F.
     
  2. Peel potatoes and dice into1/2-inch pieces. Core and seed peppers and dice into 1/2-inch pieces. Set aside.
     
  3. Mix olive oil, rosemary, salt, garlic and pepper in a bowl.
     
  4. In a small baking pan, toss potatoes and peppers with the oil and herb mixture. Bake for 30 minutes or until potatoes are fork tender. Sprinkle potatoes with parsley and Romano cheese.

I cook baked fries all the time but leave out the peppers and the cheese. I use 1 teasp. paprika, 1/2 teasp cayenne, 1 teasp. garlic power and a pinch of thyme along with salt and 1/2 teasp pepper. The well-dried potatoes should be placed in a large bowl. Place the ground spices over them. Drizzle a scant amount of olive oil onto the potatoes. You don't need that much oil! Mix thoroughly. Place on cookie sheet and bake at 425 degrees for thirty minutes. Check doneness as the time will vary as to how thickly you cut the fries. I baked these last night & cut the fries thickly so my time was 50 minutes. I discovered that 350 degrees results in a slightly soggy fry. 425 is just right.

You don't mention how much black pepper to use. Also, the instructions make no reference as to where to use the garlic.

Black pepper is One of those ingredients that should be Added To suit an individual's taste. As for fresh garlic, it burns easily an should be used towards the end of the cooking cycle.

Wrong Oven Temp and Time...30 minutes at 425 should do it.

these were yummy. mine took 30 minutes to cook at 425degfh. were the potatoes suppose to be precooked. the recipe didn't say so. will make them again the same way.
