I just adore a good bowl of brocolli and cheddar soup! I live in the cold north, so it really warms you up in the dead of winter. This recipe looks relatively easy to make and pretty healthy (I don't mind a little bit of cream in my diet.) I think that serving this in a bread bowl is a must! If anyone has made this recipe, I'm curious how this soup holds in the fridge? There are only two of us in my household, so odds are we wouldn't finish it all in one go. This looks absolutely delicious!

Panera Broccoli Cheddar Soup is one the best soups around. I am so glad I found this recipe. I love having soup in round bread. This recipe sounds very easy and does not take too much time. There is also a recipe for the bread too. You could also buy small round bread at your favorite bakery. Definitely a recipe to try.

This is a heart soup for this time of year. I do think I would have to double the amount. It says it serves about 4, but with how my family eats that won't be enough. There are three of us. I like that it uses cornstarch as a thickener so I don't have to make a substitution. Cornstarch is gluten free. That and skip the bread bowls.

How many servings does this recipe yield?
