Gooseberry Jam

Ingredients

  • Use more ripe fruit e.g. turning red.

Instructions

Top and tail gooseberries, put in pan, cover with water and boil until soft. Strain through a colander to remove skins. add 1 and 1/2 pounds of sugar to each pound of fruit and boil until red. Test.(e.g. by thermometer, or the usual here, put a drop on a cold plate and see if it has set.)
