Deli Fresh Potato Salad

Make the potato salad recipe you love to get at your local deli in the confines of your own home. Impress your family with this Deli Fresh Potato Salad. Made with mayo, mustard, hard boiled eggs, and chopped celery for an extra crunch, you're going to love it.

Ingredients

  • 2 pounds small potatoes
  • 1/2 pound mushrooms
  • 3 green onions, chopped
  • 3 stalks celery, chopped
  • 3 tablespoons vinegar
  • 2 hard-cooked eggs, sliced
  • 2 tablespoons Dijon mustard
  • 1/4 cup mayonnaise
  • salt and pepper, to taste

Instructions

  1. Cover potatoes in pan with cold water and bring to boil over high heat. Cook until potatoes are tender.
     
  2. Meanwhile, thinly slice mushrooms, onions and celery and combine in mixing bowl.
     
  3. When potatoes are tender, drain and halve or quarter potatoes, depending on size and add to bowl. Sprinkle with vinegar. Cover and refrigerate.
     
  4. When cool, chop eggs and add to bowl. Add mustard and mayonnaise, and season to taste with salt and pepper, mixing everything together gently.
