    Portuguese Chicken

    Ingredients

    • 2 to 3 tablespoons olive oil
    • 1 cup sliced scallions
    • 2 cloves, garlic, crushed
    • 1/8 tsp hot pepper sauce (more if you like it hot)
    • 4 medium tomatoes, chopped
    • 1 tablespoon cider vinegar
    • 1 bay leaf
    • 1/2 teaspoon ground cloves
    • 1/2 teaspoon Worcestershire sauce
    • 1/8 teaspoon saffron, optional
    • 1/8 teaspoon freshly ground black pepper
    • 4 chicken breasts, skinned, boned

    Instructions

    In a large fry pan, heat oil. Brown scallions, about 3 minutes. Add garlic and hot pepper sauce cook 1 minute. Add tomatoes, vinegar, bay leaf, cloves, Worcestershire, saffron, and pepper. Bring to a boil then simmer, uncovered for 15 minutes. Place chicken on top of mixture, cover and simmer for 15 to 20 minutes, or until the chicken is done.
