These are so tasty and went perfectly with our weekend barbecue as a side dish. The zucchini was still crunchy and the other flavors blended perfectly. I sprinkled a little grated fresh parmesan on top but that is entirely optional. They are really very good and we will definitely be making them again.

These zucchini pizza boats look so fancy yet are so easy to make! I have made zucchini pizza stackers before. Just slices zucchini into little circles and then alternate with rows of sauce and cheese to make a few short stacks. Those have the same taste as these but definitely don't look as nice! I'd definitely make a pesto-themed zucchini pizza using these!

What I mostly like about these pizza boats is that there is no gluten. Let's face it, it's the toppings which make the pizza so delicious. I really like zucchini as well so I think I'm going to enjoy trying this out. I would like to top it off some bacon, feta and olives. Mmmmm that sounds delicious.
