Why bother ordering pizza, when you can make it on your own? Cowboy Chicken Pizza is loaded with delicious southwest ingredients that will please the entire family. With the crust made of tortillas and topped with cheese, taco seasoning, tomatoes and avocados, it may be one of the most unique pizza recipes out there. Making for a great appetizer or a quick meal, share the bold flavor of this mouthwatering recipe.



  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, cubed
  • 1 cup taco sauce
  • 1 packet taco seasoning
  • 4 large flour tortillas
  • 2 cups refried beans
  • 2 cups Monterey Jack cheese, shredded
  • 2 cups lettuce, shredded
  • 1 avocado, sliced
  • 4 tomatoes, diced
  • 1 tablespoon red pepper flakes


  1. Preheat oven to 375 degrees F.

  2. Add olive oil to skillet over medium heat; add chicken and red pepper flakes - cook until chicken is no longer pink.

  3. Add taco seasoning and continue simmering for 5 minutes.

  4. Spread refried beans over tortillas; spread taco sauce over beans and top with chicken and cheese.

  5. Bake for 10-12 minutes. Remove from oven, slice and top with remaining ingredients.
