Warm Salmon Pasta salad is a refreshing pasta salad. Recipes wish they had as many fresh vegetables and apples as this one. With every bite will come a moment of pure content. You'll savor every bit of it.

Serves: 8

  • 2 cups whole wheat bow-tie pasta
  • 1 red apple diced
  • 2 cans (6-ounces) Sockeye salmon, broken into bite-size pieces
  • 1 cup celery, sliced
  • 3 green onions, diced
  • 1 small zucchini, trimmed and diced
  • 1 yellow pepper, seeded and diced
  • 1 cup frozen baby peas
  • 1/4 cup walnuts, coarsely chopped
  • For Curry Vinaigrette
  • 1/2 cup canola oil
  • 1 tablespoon lemon juice
  • 2 teaspoons curry powder
  • salt and pepper to taste
  1. Cook pasta according to package directions. Drain well.
  2. In a salad bowl, combine pasta, apple, salmon, celery, green onions, zucchini, yellow pepper and baby peas. Set aside.
  3. To prepare the vinaigrette: In a small bowl, combine canola oil, lemon juice, curry powder, salt and pepper. Heat for 30 seconds in microwave.
  4. Pour vinaigrette over salad and toss lightly. Garnish with walnuts. Serve immediately.

This salmon salad looks really delicious. It is so healthy, just up my street. I like the use of curry powder in the dressing and I'm looking forward to tasting that. There is such a lot of vegetables in this salad and I like the way apple is added. I am also a big fan of nuts in a salad so am really going to enjoy this one.
