Peppermint Chocolate Pavlova Roll


  • 3 egg whites
  • 1/2 tsp vinegar
  • 2/3 cup castor sugar
  • chocolate chips
  • 1/2 tsp peppermint essence
  • Whipped cream


(650 watts). Beat egg whites until soft peaks form. Add half the sugar and beat until dissolved. Gradually add the rest of the sugar and continue beating for 4 minutes. Mix in essence to taste. Place baking paper on turntable and spoon the meringue on to this, spreading into a large circle 1 - 2 cm thick. Microwave on HIGH 2 minutes. Stand with door of oven open for 6 minutes. Allow to cool. Place waxed paper on top of meringue and a baking tray on top. Turn over. Remove baking paper and allow to cool thoroughly. Spread with whipped cream over meringue, sprinkle with chocolate chips and roll up. Slide the roll on to a serving dish on a serving dish spread with more whipped cream and sprinkle with chocolate chips, over the top. Chill before serving.
