    Microwave Bread Pudding

    Ingredients

    • 1/4 cup butter
    • 4 slices bread torn into pieces
    • 1/2 cup sugar
    • 2 tablespoons lemon juice
    • 1 cup milk
    • 3 eggs
    • cinnamon

    Instructions

    In a 1 qt casserole microwave butter until melted. Add bread and sugar to the butter. Toss to lightly mix sprinkle the lemon juice over toss again combine mil k and eggs beat until smooth. Pour over bread mixture. Sprinkle with cinnamon. Microwave on high for 11-13 minutes until the center is just about set yet still moist. Most important, add a cup of water to the microwave to keep moist. Just set it off to the side.
