"Do you like ceviche? Well, twist it up with a bit of grapefruit! This is a classic ceviche recipe with a twist. Ceviche is traditionally made with lime or lemon. I learned that a potential problem with grapefruit is that it does not have as much acidity as other citrus fruits. So, instead of just fully replacing out the lemon or lime from a traditional recipe, we are going to place the fish in a grapefruit AND lime mixture. We will also add grapefruit to the ceviche."
