Basic Baked Fish

Basic Baked Fish is a great go-to meal for any occasion. You can create a low-fat version using lean fish and reduced-fat mayo. There's nothing like easy fish recipes.

Ingredients

  • 2 pounds fish fillets (choose whitefish of choice)
  • 1 tablespoon minced onion
  • 1/2 cup mayonnaise
  • 1/2 teaspoon marjoram
  • 1/2 teaspoon dry mustard
  • 1 teaspoon lemon juice
  • dash pepper
  • paprika to taste
  • lemon slices for garnish

Instructions

  1. Preheat oven to 375 degrees F.
     
  2. Place fish in oiled baking dish. Mix remaining ingredients except paprika.
     
  3. Spread over fish. Bake at 375 degrees F for 20 minutes until browned.
     
  4. Sprinkle with paprika and garnish with lemon slices.
     
  5. Pair alongside asparagus or spinach.

Baked is definitely my favorite way of preparing fish and this recipe, while including lovely flavors of marjoram, mustard, lemon and paprika, still allows the delicious fresh taste of the fish to come through beautifully. It is really quick and easy to prepare too which makes it a good dinner for the family on a busy weekday.

This recipe is simple and easy to follow. I wonder what could be a good low-fat substitute for mayonnaise. The only thing that comes to mind is tomato sauce, although that would definitely change the flavor. Also, the fat in mayonnaise serves to keep the fish moist whereas tomato sauce is water based so it might cause the fish to be drier. Any suggestions?
