Curried Peas w/ Spiced Potato Mash [Vegan, GF]
"Curried Peas w/ Spiced Potato Mash = Vegan Indian food at its finest. Accidentally gluten free too! Ingredients: for the spiced mashed potato 750g/1.7lbs floury potatoes, e.g. Maris Piper or Russet, peeled and cubed 3½ tbsp neutral oil e.g. sunflower 1 tbsp black mustard seeds 1 tsp cumin seeds 1 thumb ginger, finely chopped 2 cloves garlic, finely chopped ½ fresh green chilli, deseeded and finely chopped (use whole chilli if desired) 1 tsp garam masala 1 tsp ground turmeric 120ml/½ cup plant-based milk e.g. almond, soy ½ tsp fine salt for the curried peas 1 medium onion, roughly chopped 1 thumb ginger, chopped 4 cloves garlic, chopped 3 tbsp neutral oil e.g. sunflower 1 tsp tomato puree 1 tsp ground cumin 1 tsp ground coriander 1 tsp ground turmeric ½ tsp chilli powder ½ x 400ml/14oz can full fat coconut milk 420g/3 cups frozen peas 1 tsp fine salt."

As a result of following a low carb eating plan we used sweet potatoes for the mash and it was absolutely fine. I love the Indian flavors in this dish and the spicy aromas during prep and cooking are just fabulous! We hosted a curry buffet last week and included this dish. I loved it and every last bit was eaten by the guests so they must have enjoyed it.
