This is the best idea! I made the mix up yesterday. I did use shortening instead of canola oil, because that is what I had on hand. I made pancakes for dinner tonight with this mix. They were fluffy, thick, and delicious! I will not be buying pancake mix again.

With Pancake Tuesday having passed and making the same old pancakes I think I want to try get another nice recipe for next year...I don't think my partner will be complaining trying out differs pancakes) this one sounds like a lovely mix and I can't wait to give it a try! Fingers crossed they turn out like your picture!!!

I agree, this pancake mix is very convenient. I like that it uses vegetable oil and not butter. I've only used butter to make pancakes but I used coconut oil to make brownies once or twice and they turned out quite well. The oil really does mix easily with the dry ingredients.

I love lazy weekend mornings, and always make pancakes! This would save me lots of time measuring every week...I could make a big batch at once and have it on hand for when I need it
