Homemade Pancake Mix is a fun product to have on hand. Yes, you can buy a boxed mix from the grocery store, but where's the fun in that? This pancake mix recipe takes minutes to prepare and you can say you made it yourself! One cup mix yields six pancakes, and the recipe makes over 4 cups. The best part is that it makes fluffy pancakes that are perfect for a weekend breakfast. Just serve with bacon and fruit, and this will be the best meal of the day!

This is the best idea! I made the mix up yesterday. I did use shortening instead of canola oil, because that is what I had on hand. I made pancakes for dinner tonight with this mix. They were fluffy, thick, and delicious! I will not be buying pancake mix again.

With Pancake Tuesday having passed and making the same old pancakes I think I want to try get another nice recipe for next year...I don't think my partner will be complaining trying out differs pancakes) this one sounds like a lovely mix and I can't wait to give it a try! Fingers crossed they turn out like your picture!!!

I agree, this pancake mix is very convenient. I like that it uses vegetable oil and not butter. I've only used butter to make pancakes but I used coconut oil to make brownies once or twice and they turned out quite well. The oil really does mix easily with the dry ingredients.

I love lazy weekend mornings, and always make pancakes! This would save me lots of time measuring every week...I could make a big batch at once and have it on hand for when I need it
