Prickly Pear Margaritas

Prickly Pear Margaritas

Celebrate Cinco de Mayo this weekend with easy drink recipes like these Prickly Pear Margaritas. Enjoy the orange and pear combination with a sweet finish.

  • 1 1/4 pound red prickly pear fruit (cactus apples)
  • 1 cup lime juice
  • 1 cup tequila
  • 3/4 cup orange-flavor liqueur
  • 2 tablespoons sugar
  • 4 cups crushed ice and thin lime slices

  1. Wearing heavy cotton or rubber gloves, cut off ends of prickly pear and slice a 1/8-inch-deep lengthwise slit through peel on each fruit.
  2. Pull back peel and remove pulp; discard peel. Cut fruit pulp into 1/2-inch chunks. In a blender, combine half of all these ingredients: prickly pear chunks, lime juice, tequila, orange liqueur, and sugar; whirl until smooth.
  3. Add half the ice and whirl until blended. Pour into glasses slowly, leaving seeds behind. Discard seeds.
  4. Repeat step 2 with remaining pear chunks, lime juice, tequila, liqueur, sugar, and ice. Garnish with lime slices.
