Ingredients

  • 1 (1-ounce) package sugar-free instant vanilla dry pudding mix
  • 1 (15-ounce) can crushed pineapple with juice
  • 1 (12-ounce) container reduced-fat whipped topping, thawed
  • 1 cup mini marshmallows
  • 1/2 teaspoon rum extract
  • Toasted coconut for garnish

Instructions:

  1. In a medium bowl, combine the pudidng mix and pineapple with juice.

  2. Gradually fold in the whipped topping.

  3. Stir in the marshmallows and rum extract.

  4. Place the mixture into 8 dessert dishes or glasses.

  5. Chill for 1 to 2 hours until set.

  6. Garnish with toasted coconut and serve.
