"Pumpkin pie, apple pie, and other pies have their place, but in my opinion, nothing compares to my Chocolate Peppermint Pie! Make sure your cream cheese is totally softened before trying to make your peppermint layer! If it is still cold, you will end up with cream cheese clumps in your peppermint layer instead of the smooth and silky filling you want. I usually grab it out of the fridge when I put the first layer in the freezer and it’s the perfect temperature. "

Ingredients

  • 1 3.9 oz box instant chocolate pudding
  • 2 cups milk
  • 1 (8-ounce) cream cheese softened
  • 1 1/4 cup powdered sugar
  • 1/2 teaspoon clear vanilla extract
  • 1 (8-ounce) container whipped topping
  • 1/2 teaspoon peppermint extract
  • 3/4 cup chocolate chips
  • 4 tablespoons cold water
  • 1 teaspoon unflavored gelatin
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon clear vanilla extract
  • Crushed peppermints, optional for topping
  1. To make your chocolate peppermint pie, you’ll start by making the chocolate layer. First, combine the pudding mix and the milk in a medium-sized mixing bowl.

  2. Whisk the pudding until smooth, then place in the fridge to set for about 5 minutes. Remove the pudding from the fridge and spoon it into the Oreo pie crust, smoothing it out as evenly as you can.

  3. Put the pie in the freezer for 2 hours to fully set. When the pie is just about set, make the peppermint layer by adding the cream cheese and powdered sugar to a large mixing bowl.

  4. Use a hand or stand mixer to mix the ingredients until smooth. Add in the peppermint extract and vanilla extract and beat again until combined.

  5. Fold in the whipped topping and the chocolate chips gently until incorporated.

  6. Remove the pie with the chocolate layer from the freezer and scoop the peppermint layer on top. Smooth out the peppermint layer and return the pie to the freezer for 1 hour to set again.

  7. When the pie is almost set, make the cream layer by adding the cold water to the gelatin in a small chilled mixing bowl.

  8. Let the gelatin soak in the water for 5 minutes.

  9. In a large mixing bowl, pour in the heavy whipping cream, vanilla, and powdered sugar. Beat on low speed for about 30 seconds, then turn the speed up to high and beat for 2 minutes or until soft peaks begin to form.

  10. Place the whipped cream mixture in a piping bag prepared with an open star tip. Remove the pie from the freezer and pipe a star design all over the top. Top with crushed peppermint candies and serve chilled!
