Mont Blanc with Glazed Chestnuts

Mont Blanc, meaning white mountain, is a creamy French holiday dessert that resembles a meringue or a cream cake with chestnuts. If you like chestnut dessert recipes, Mont Blanc with Glazed Chestnuts is for you!

Serves: 4

  • 2 1/2 pounds chestnuts
  • 1 to 2 cups milk, as needed
  • 1 teaspoon vanilla
  • 1 cup sugar
  • 1 cup heavy cream, whipped
  • glazed chesnuts
  1. Slit chestnuts and cover with water in a large saucepan.
  2. Boil for about 30 minutes, drain and peel, removing shell and brown inner skin.
  3. Cover chestnuts with milk in a saucepan. Add vanilla and bring to boil point.
  4. Cover and cook over low heat for about 45 minutes or until chestnuts are tender and mealy. Stir occasionally to prevent sticking.
  5. Drain and mash chestnuts in a food mill.
  6. Measure puree and add half of the amount of sugar. (For example: If the recipe produces 1 cup of the puree, add 1/2 cup of sugar.)
  7. In a saucepan set puree over moderate heat and, stirring constantly, cook until mixture becomes thick and pulls away from sides of saucepan, about 30 minutes.
  8. Remove from heat and let cool completely.
  9. Put puree in a potato ricer and press chestnut through, letting them fall in a mound onto serving plate.
  10. Cover this with whipped cream and garnish with glazed chestnuts.
