Did someone say cheesecake? Count me in. I love cheesecake. I love that the outside of the cheesecake bites have graham crackers to add more crunch and some texture to the cheesecake muffins. I can't believe you found a way to combine both desserts. It is like breakfast and dessert at the same time in one great treat.

The ladies at the buffet lunch I hosted last week just LOVED these Blueberry Cheesecake Muffins! Even though there are three separate parts to the recipe it is not at all difficult or time consuming to make and the result is sheer heaven! (I used a different brand of muffin mix because the recommended brand is not available in South Africa and it worked perfectly so don't be afraid to substitute another brand if you need to)
