Fiesta Ranch Chicken Pasta Salad

Fiesta Ranch Chicken Pasta Salad is not an ordinary pasta salad recipe. It's made with ingredients that you normally don't find in these types of salads, such as black beans and taco seasoning. This southwest flair adds something special to the dish. You're sure to surprise your friends when you bring this chicken pasta salad to your next potluck. It's a good surprise, though. After all, this salad is served with Fritos. How often do you see that?

I think we all love a quick, simple dish to put together for the family dinner without any fuss and this recipe certainly ticks all those boxes. The combination of mayonnaise and buttermilk or yoghurt is always good and, although Hidden Valley Fiesta dip mix is not obtainable here in South Africa, I just used some imagination and made a nice spicy combination to zzzshoooosh up the dressing, lol! We had it with spicy tacos, because we did not have Fritos, and it was very, very tasty.

This looks like a meal in a salad. I will leave out the peppers but try everything else. We love pasta salad, but I never think to add meat to it. This will make a great potluck dish and a good menu item for a graduation party. Thanks for the great recipe!

This recipe looks amazing and so flavorful! A good, high-protein substitution would be to use quinoa instead of the pasta. Also, feel free to mix and match different types of beans like white beans or chickpeas to change up the flavor a little. And a little cilantro on top would be the icing on the cake!

Well, this looks amazing. I'm excited to find out how good it tastes!
