Poor Man's Hamburger Soup

Ingredients

  • 1 pound lean ground beef
  • 1/4 teaspoon pepper
  • 1/4 teaspoon oregano
  • 1/4 teaspoon basil
  • 1/4 teaspoon seasoned salt
  • 1 envelope onion soup mix
  • 3 cups water
  • 1 can (8-ounces) tomato sauce
  • 1 tablespoon soy sauce
  • 1 cup sliced celery
  • 1 cup sliced carrots
  • 1 cup macaroni, cooked and drained
  • 1/4 cup Parmesan cheese or cheddar cheese

Instructions

  1. Crumble beef into slow cooker.
     
  2. Add spices and soup mix.
     
  3. Stir in water, tomato sauce and soy sauce; then add celery and carrots.
     
  4. Cover and cook on low for 6 to 8 hours.
     
  5. Add cooked macaroni and Parmesan cheese. Cover and cook on high for 10 to 15 minutes.

I cooked the ground beef before I put it into the crock pot. Oddly enough, the soup could have used a big more flavor but I'm not sure what could have been added. It was still mightly hearty and tasty and a great way to use produce wasting away in my vegetable crisper; the boyfriend enjoyed it very, very much!

Instead of using tomato juice, try using vegetable juice, like V8. Add some lemon juice and a few drops of hot sauce to give it just a little kick. You might try omitting the spice except the pepper and just adding in a bay leaf. If you have left over beef from a roast, cut that up into bite sized pieces and soak in about 2 cups of beef broth, then add the entire thing to your soup. No salt needed. I make this for my family and they love it!

stupid question here...but do you cook the ground beef before putting it into the slow cooker? It seems that the soup would get greasy if you didn't.

It's a good idea to cook the hamburger first, just like you suggested, and then pour off the fat before you add it to your soup.

My family has made something similar to this for years, with the ground beef, two cans of tomatoes (stewed), some water, either a bag of frozen mixed veggies, or two cans of mixed veggies, and a box of macaroni and cheese. Yummy. We got this from a British friend. It's our go to quick meal, it can be ready in 1/2 hour if you need it, but it's better if it sits on the stove for a couple of hours.

Did you put the cheese in also when using the Kraft mac and cheese?
