NotesI used a roast from frozen. To be honest, I rarely plan ahead for meals. Therefore, when I made this last weekend, I dug in the freezer to see what what there. (I know, one would think that I was a planner!). There was a beautiful beef roast. It was a perfect day to take out the slow cooker and let the dinner cook the day away…little effort country goodness.

Ingredients

  • 1 3-4 Lb. beef bottom round roast or chuck pot roast
  • 2 Lbs. Potatoes, peeled and cut into chunks
  • 1 Lb Carrots, peeled and cut into chunks
  • 1 1.4 Oz. Knorr Vegetable Recipe Mix
  • 2 TBL. Flour
  • 1 Cup Water
  • 2 Cups Juices from Roast.
  1. Place the roast in the crock pot, sprinkle 1/2 of the Knorr Vegetable Recipe Mix on top of the roast.

  2. When there is approximately 2 hours left of cooking, add half of the potatoes and carrots. Sprinkle the rest of the Knorr Vegetable Recipe Mix. Add the rest of the potatoes and carrots. Cover and cook the remaining few hours.

  3. Cook on high 6 hours. If you wish to cook longer, you can also cook this on low for 8 hours.

  4. GRAVY Once the roast and vegetables are removed from the crock pot, pour the juices into a pan. Add a cup of water. Heat on medium-high until boiling.

  5. While the juices are heating up, mix 2 TBL of flour with 1/4 Cup of water until the flour is thoroughly incorporated.

  6. Once the juices are boiling, slowly pour in the flour mixture stirring constantly. Boil for 2 minutes and turn off heat.
