Wow, this recipe looks very interesting with creative flavors. I can't imagine the apricot peach preserves with Russian dressing but I'm always looking for a new recipe and this looks simple and yummy. It makes me wonder what other combinations people have come up with for a quick recipe like this one!

I have some of my own peach jam that I think I will try instead of the peach apricot preserves. I have never even seen apricot peach preserves. Maybe it is regional or not a big seller around here. Most recipes for chicken in a crockpot seem to cook for less time. Eight hours is the absolute longest I would cook chicken breasts in a crockpot. I would go 6 hours for the breasts so they won't get too dry.

This looks delicious, the color looks very appetizing. The simplicity of this recipe is pretty unbeatable. I have made something similar in the past using Catalina dressing instead of Russian and it turned out really well. I have also made it with peach jam, with good results.
