Making Homemade Buttermilk Substitute takes no more than 10 minutes and uses only two ingredients, so you don't have to make a trip to the grocery store. Simply mix milk with lemon juice or white vinegar, let stand for 10 minutes, and it's ready to use! Copycat recipes for baking ingredients are great ways to save time and money.

Yields1 cup


  • 1 cup milk
  • 1 tablespoon lemon juice or white vinegar


Combine milk with lemon juice or vinegar and stir.

  1. Let stand 5 - 10 minutes, the mixture will look curdled.

  2. Use as much as your recipe calls for.

I use this method to make buttermilk substitute all the time. I don't use buttermilk enough to justify buying a big carton when I go shopping. I do love making this bran muffin recipe that calls for buttermilk. I almost always use this substitution and you honestly can't tell the difference. You would never know. It's super easy to do.

The recipe is a good one. I hate buying buttermilk because I never need to use all of it. This eliminates having to buy something extra and throwing part of it away. The reason for only giving it a three star is due to the blurb about sweetened condensed milk under the video. It doesn't match the video or recipe.
