Carrot Cake Mix Cookies
Crisp, chewy, and covered in cream cheese frosting... these cookies are an instant hit!
Carrot cake is one of our favorite desserts, and we are so excited to see those magical flavors transformed into a cookie recipe!
These easy Carrot Cake Mix Cookies are completely delightful. They are chewy and bursting with carrot and spice flavor. Plus they're topped with a cream cheese frosting that you will be tempted to eat right off of the spoon.
These cookies are also very easy to make! A boxed cake mix takes care of a lot of the work for you, but the genius mix-ins mean that you don't have to sacrifice flavor for convenience. We love this recipe for Easter or any time of year!

Preparation Time10 min
Cooking Time10 min
- 1 (15-1/4-ounce) box carrot cake mix
- 2 eggs
- 1/3 cup butter, softened
- 1/2 cup raisins
- 1/4 cup chopped walnuts
- 1/4 cup butter, softened
- 1 tablespoon milk
- 2 cups powdered sugar
- 1/2 teaspoon vanilla extract
Carrot Cake Mix Cookies
Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
Combine the cake mix, eggs and butter into a medium sized bowl. Mix thoroughly. The dough will be very thick and sticky.
Add in the raisins and walnuts and mix again. Let dough sit for 5-10 minutes.
Use a cookie scoop to create uniform balls of dough. You can then roll the dough in your hands after scooping to smooth all of the edges, or just place the cookie dough ball on the pan and gently pat down any edges.
Bake at 350° for 8-10 minutes. Remove from oven and let the cookies cool on the baking sheet for 3 minutes, then transfer to a cooling rack.
To make cream cheese frosting, whip butter and cream cheese together using an electric mixer. Add in powdered sugar, milk and vanilla extract.
Once fully cooled, frosting with cream cheese icing and add sprinkles, if desired. Store in an air tight container for up to 5 days.
