These look wonderfully simple and delicious. Along with the apples and caramel, I'd be tempted to add some chopped walnuts or some raisins. The cookies look like wonderful treats and I know I'll need to make up a batch for the grandchildren as well as for friends. These would be delightful with some hot tea or chocolate.
