  • 1 (3.4-ounce) box instant butterscotch pudding mix
  • 4 ounces cream cheese, softened to room temperature
  • 1 egg

  • 1/2 cup canola oil
  • 1 cup old-fashioned oats
  • 1 (11-ounce) package butterscotch chips

  1. Preheat oven to 350 degrees F.

  2. Spray cookie sheet with non-stick cooking spray and set aside.

  3. Pour 1/2 box of cake mix into mixing bowl. Add entire package of instant pudding and cream cheese. Beat on low with an electric mixer for 1 minute until cake mix, pudding and cream cheese are combined.

  4. Add egg, vanilla and oil and beat on medium speed for 2 minutes. Add rest of cake mix, oats and chips and mix by hand, using a rubber spatula.

  5. Drop by teaspoonfuls on prepared cookie sheet. Bake 10 to 12 minutes until golden; cookies will be pale with light brown edges around the bottom. Remove from oven and cool 5 minutes; then transfer to cooling rack and cool completely.
