Mini Gingerbread Men Cake Mix Cookies

Ingredients

1 box spice flavor cake mix
1/2 cup flour
2 large eggs
1/4 teaspoon salt
1/3 cup vegetable oil
1/3 cup dark molasses
2 teaspoons ground ginger

Instructions

Combine cake mix with flour, salt, and ginger.
Add eggs, oil, and molasses. Beat with a mixer for 2 minutes, scraping down the sides.
Cover with plastic wrap and refrigerate dough at least 2 hours before continuing.
Preheat oven to 375 degrees F.
Roll out the dough on a lightly floured surface to a 1/4-inch thickness.
Cut with cookie cutters and place on parchment lined baking sheets, allowing 1 inch between cookies.
Bake for 8 - 10 minutes until edges just begin to brown. Cool on a cooling rack.
