Pineapple bars will take you away to warmer days no matter the time of year. These tasty cake mix bars are full of coconut flakes and lemony sweetness that anyone is sure to enjoy. Who doesn't love a bright and sunny lemon bar? Well, this recipe takes it up a notch and delivers a different texture with the addition of cream cheese, coconut flakes, and lemon cake mix. Instead of the more gooey texture you're used to, these have all the lemony tang but more of a cake-like taste. Bring these pineapple bars to a summer (or winter!) potluck. They're sure to make you feel like sipping a tropical beverage out on the beach.

  • 1 box lemon cake mix
  • 4 large eggs
  • 1 stick melted butter
  • 1 (16-ounce) box powdered sugar
  • 8 ounces package cream cheese, softened
  • 2 cups sweetened flaked coconut
  • 1 teaspoon vanilla extract

Pineapple Bars Recipe

Instructions

  1. Grease a 9x13-inch pan.

  2. In a large bowl, combine lemon cake mix with melted butter, vanilla extract, and 2 eggs. Mix until fully combined and pour into greased pan. Spread evenly.

  3. In another large bowl, combine powdered sugar, remaining 2 eggs, cream cheese, and coconut flakes. Mix well until evenly combined.

  4. Pour mixture on top of your other mixture in the pan and spread evenly.

  5. Bake in your oven at 350 degrees F for 30 minutes.

What a nice, light treat for having on a summer day! Of course, these are great any time of the year. When I made this, I added some sliced bananas on top after the cake was baked and I enjoyed the additional taste it added to the lemon and coconut. It's a very simple and tasty dessert to whip up with just a few ingredients.

16 ounces is typical of a box of powdered sugar. Hope that helps!

These sound so good! I can tell they will be moist and oh so lemony! I might not put in that much coconut, but I think they'll still turn out okay. These will be good for a spring luncheon.
