These would be a great healthy appetizer alternative to serve at your next game day party! Sweet potatoes pack so much more nutrition than the russet variety, and these are full of healthy and delicious veggies. The combination of veggies makes them so colorful and appealing to the eye as well! I can't wait to make these soon!

I cook with sweet potatoes pretty often since they are filling and healthy. This is a really great recipe that I can't wait to try! This is quick enough to make during the week, and a great way to use up whatever leftover veggies you might have in your fridge. I bet you could use leftover sausage instead of chicken and any type of cheese you happen to have on hand. You could omit the chicken altogether and serve this as a delicious or a vegetarian meal all on its own. Sounds yummy!

I have a ton of sweet potatoes I harvested last fall. This would be a good way to use up a few. I never thought of twice baking sweet potatoes before. The is like a taste explosion. So many flavors going on. I will be trying this. I am not sure about adding the peas? I'll decide when I make them.

This looks scrumptious. I was thinking of making potatoes for supper. This looks like a great idea. I usually stuff my potatoes with a tuna/cheese mixture but I like the idea of the chicken so I am going to try that. I also usually use plain old potatoes so using sweet potatoes is also going to be a nice change.

Ohhh this looks like a perfect (and an easy!) dinner.
