Ingredients

  • 2 pounds drumsticks
  • 1 1/2 cup all-purpose flour
  • 1 tablespoon salt
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 1/4 cup canola oil

Fried Chicken Recipe

  1. Rinse the chicken well and thoroughly pat it dry.

  2. Place the chicken in a bowl. Add the flour and spices. Toss to combine.

  3. Transfer the chicken to a wire cake rack and let it sit, refrigerated, for 2 hours, so the flour will adhere. Reserve the remaining flour mixture.

  4. Heat the oil in a large skillet over medium-high heat. Dredge the chicken once more in the flour mixture, shaking off the excess.

  5. When the oil is hot but not smoking, add the chicken, making sure you do not crowd the pan. Cover, and cook until the chicken begins to turn brown, about 8 minutes, reducing the heat slightly if necessary. Turn the chicken, cover, and continue cooking until it is cooked through and the juices from the thigh run clear when pricked with a fork, an additional 10 minutes.

  6. Arrange the chicken on a brown paper bag to drain, and leave it for about 5 minutes. Then transfer the chicken to a warmed serving platter, garnish with the parsley and serve immediately.

After so much food over the holidays I thought for sure I'd be eating salad for the remainder of the year...but this recipe just sounds so good. I'm not a fan of the drumstick but this would be perfect for wings at New Years when the last thing I want to think about is cooking. I've never tried ginger to season chicken before so I'm willing to bet it's going to turn out wonderful and compliment the additional spices.

I have tried many fried chicken recipes which I have got from here. Some were good and some were not so good but we had fried chicken overkill. This recipe does seem simple. Do you think that drying the chicken makes that much difference? I never did that before. I am a bit scared to cover a pot of oil whilst something cooks but the chicken does come out looking great so I'm going to try this one.

This recipe calls for 1/4 cup of oil in a large skillet. Filled with chicken legs. It is not too much oil to cover it.

Who doesn't love fried chicken?? Definitely trying this delicious-looking recipe.
