This Aloha Chicken and Rice recipe will have you dancing the Hula in your kitchen. A great "one pot wonder" with a sweet and sour flavor that your family will love. Using instant rice is so easy and convenient, and the addition of chopped bacon on the top at the end is superb. This dish is definitely part of the regular rotation at my house.

Yummm! Instant rice is not a thing here in Africa but as our family mostly follows a low carb diet anyway we left the rice out of the recipe altogether. As a result we reduced the liquid a little but even with those changes the dish was really delicious and definitely worth having again. The brown sugar, garlic and soy sauce provide a wonderful flavor, as do the pineapple tidbits.

So this is basically a sweet and sour chicken casserole? I love it. Easy to cook up in one pot, and much cheaper than ordering Chinese takeout. I will leave out the onion, but keep the rest the same. Who knew bacon would complete this dish? My family will love this unique dinner recipe.

I love to use the instant rice in one pot dishes like this one - it saves so much time and I always have it on hand! The sweetness in the sauce goes great with the chicken, and it gives the rice such a nice flavor. Since it is sweet, the kids will love it, and it is topped with bacon, which is a big husband pleaser! A win - win!
