This One Pot Cowboy Chicken Dinner recipe has it all. GREAT combination of flavors, the ease and convenience of being prepared in one pot, and it's done in 30 minutes. I also used chicken thighs (personal preference). This is a great weeknight dinner that you and your family will want to be in regular rotation.

I am sure that every busy cook loves one pot meals just as much as I do. They are an absolute savior for week night meals when time is limited and this is a really delicious one. We used chicken thighs, not breasts, but made no other changes. I loved the garlic, chili and cumin flavors and will definitely be making this one again.
