  • 2 cups Shredded chicken
  • 1/3 cup Plain Greek yogurt
  • 1 Fuji apple, diced not peeled
  • 3 Stems of celery, sliced
  • 1/4 cup Raisins, or any small dried fruit
  • 1 dash Salt
  • 1 dash Pepper
  • 1/2 teaspoon Garlic powder
  • 1 tablespoon Mild creamy Dijon mustard

  1. Chop, dice, or slice chicken, apple, and celery and toss it into a bowl with the raisins.

I have made other chicken salad recipes. I will probably make this as it looks good

Instead of raisins and dijon mustard try craisins and honey mustard instead. I have made it this way and it just disappears I also use mayo instead of yogurt but I will try it with yogurt the apples I also use are pink lady and granny smiths but no celery once in a while walnuts or almonds just a handful

I haven't yet experimented with using Greek yogurt as a mayo substitute. Usually I make mine with chicken, mayo, celery, and dill. I love the taste of dill in it and I bet the mustard would be a great addition. I have also never put apple in mine either! I guess I need to spread my wings and bring my chicken salad game up a bit. I like the idea of dates as well as mentioned below.

This really is a quick recipe to make and it sounds amazing. I've never had chicken salad with Dijon or any type of mustard before but I'll definitely give it a try. My chicken salad is a little similar to this...except I use chopped dates, sliced green grapes and mayo. Love the idea of Greek yogurt too!

Not only delicious but also made with ingredients that we all have in our pantries and what could be better than that? Whenever I cook chicken I try to make extra because it is so easy to make into a fairly instant meal just like this one! Today was a gorgeous summery day (even though we are heading to winter here in South Africa) so we had this for lunch with fresh green salad and crunchy Italian bread. Heaven!
