Any time a recipe starts with the words "one-pot" you have my attention. This One-Pot Caprese Chicken and Rice recipe has rapidly made it to the top of my one pot wonder favorite recipes list. I love Caprese salad and this recipe has all the wonderful flavors of that salad in an easy to prepare, hardy weeknight dinner that my family loves. It also works great with boneless chicken thighs (my favorite).

One of my families' favorite recipes is a chicken caprese that we make in our wok. It's chicken, balsamic, grape tomatoes, basil, olive oil, and some shredded cheese- absolutely delicious! We usually serve it with pasta or veggies but rice like in this dish would be amazing, too!
