Creamy Ranch Chicken & Rice Supper

Ranch-Style Rice:
Heat 2 1/4 cups water and the remaining salad dressing mix in a 3-quart saucepan over medium-high heat to a boil.
Stir in 1 cup uncooked regular long-grain white rice and cook according to the package directions.
Serving Suggestion:
Serve with a vegetable blend. For dessert, serve chunky applesauce topped with cinnamon.

- 1 tablespoon vegetable oil
- 1 1/4 pound skinless, boneless chicken breast halves
- 1 (10-3/4-ounce) can Campbell's® Condensed Cream of Mushroom Soup (Regular or 98% Fat Free)
- 3/4 cup milk
- 1 (1-ounce) envelope ranch salad dressing mix
- paprika, to taste
Instructions

Heat the oil in a 10-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until it's well browned on both sides.

Stir the soup, milk and 1/2 package salad dressing mix in the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 10 minutes or until the chicken is cooked through. Sprinkle with the paprika.

Serve with Ranch-Style Rice.

I made this for supper but modified it slightly. In a separate pan I fried some bacon bits until crispy and then added mushrooms. I then added that to the chicken and soup mixture. I didn't make it with rice but took some puff pastry, cut it into squares and baked that in the oven until puffed up. I put one on the bottom, piled on the chicken and sauce, and topped it with another one. Believe it or not my son picked it up and ate it like a sandwich! Ha ha. We enjoyed it very much.

Both of these look amazing. The chicken and the rice. I like the way the rice is cooked with the seasons. I never thought to do that. I think it's a great idea. This is such an easy meal to make, I am always looking for new flavors. I especially like cooking with chicken breasts so I'm definitely going to give this one a try.

I made this dish last night for supper. I have posted a photo here of how it came out. I combined two recipes from this site for the supper. Instead of eating it with rice I made some pastry cases and spooned the chicken on to that. I have never used soup before as a sauce and enjoyed doing that. Everyone loved this dish!

Great tasting, very easy to prepare and the whole family loved it. What could possible be better? We made our own mushroom sauce (do not like the taste of canned soup as a sauce), added a couple of crushed, fresh garlic cloves and we had the dish over a bed of pasta instead of rice. Altogether a yummy meal that was happily devoured by everyone from the youngest to the oldest members of the family.

This recipe sounds like a creamy, yummy dinner. I also think cream of chicken soup seems like a good substitute for cream of mushroom soup. I want to try this with rice and again with mashed potatoes. This will make a good hearty dinner. I always have chicken breasts on hand, so this is an easy dinner to make.

I never thought of mixing soup and ranch to make a gravy for my chicken. I love the idea, but I am not big on mushrooms, so I think I might try substituting cream of chicken soup instead. My family loves the combination of chicken and ranch. Have you ever added bacon bits to kick it up a notch? I think that might be something I will have to try as well.
