I have to admit that I have never used ground chicken before, but I am curious about this recipe because it sounds so good. Does the texture resemble ground turkey or beef more? Is it like eating shredded chicken. I have made pulled chicken with barbecue sauce and loved the recipe. It was much cheaper at the time than pork too.

These little Chicken Parmesan Pillows are absolutely delightful. They are full of fun and flavor. The only change I made was, I made the pillows in my hand, like a stuffed meatball, and rolled them in the breadcrumbs before putting them in the muffin tin. Then I sprinkled a little more bread crumbs on top. They came out great. A perfect party appetizer.

Clever! I love chicken parmesan, and I love the idea that this is a fun way to turn one of my favorite dishes into a party appetizer.

These are such a unique way to make chicken parm. I like the use of the cheese sticks as a time- and money-saver. But my favorite ingredient is the use of the fresh red pepper. It provides a sweetness to this savory dish. These also seem really easy to make has anyone tried?
