    Tina's Triple Corn Casserole

    Ingredients

    • 1/2 cup butter, softened
    • 1 cup sour cream
    • 1 egg
    • 1 can (16-ounce) whole kernel corn, drained
    • 1 can (16-ounce) cream style corn, undrained
    • 1 package (9-ounce) corn muffin mix
    • 1 cup Cheddar cheese, grated

    Instructions

    1. Preheat oven to 375 degrees F.
       
    2. In a large bowl, mix together butter, sour cream and egg.
       
    3. Stir in cans of corn and corn muffin mix.
       
    4. Spoon mixture into buttered 2-quart casserole dish. Bake for 45 minutes.
       
    5. Add cheese; stir well.
       
    6. Cook until dish is slightly puffed, about 15 minutes.

    I have tried different versions of this recipe...some got too complicated with extra ingredients! I did this the way it is written with only using frozen whole corn instead of canned and the addition of 2 T. chopped chives for color, mostly. Moist, creamy, and sweetSO YUMMY!
