Three Cheese Casserole

Three Cheese Casserole will fill your cheese quota for the week. Packed with chicken, cheese and noodles this will satisfy the hungry man in your household. Casserole recipes do not get any cheesier than this one.

  • 12 ounces cottage cheese
  • 8 ounces Mozzarella cheese, grated
  • 4 ounces feta cheese, crumbled
  • 8 ounces small sea shell macaroni noodles
  • 2 ounces sliced pimientos
  • 2 cans (5-ounces) white chicken
  • 2 cans (5-ounces) tuna in spring water
  • 1/2 can cream of broccoli soup, with 1/2 can water added
  • 2 1/2 pinchs sliced mushrooms
  • 2 celery stalks, finely chopped
  • 5-6 green onions, thinly sliced
  • 1/2 pound sour cream
  • bread crumbs, for topping
  • salt and pepper, to taste
  1. Preheat oven to 350 degrees F.
  2. Chop the celery and green onion, and put in a large mixing bowl. Add the pimientos, feta cheese, cottage cheese, 4oz. of the mozzarella cheese, 1/2 can of watered down cream of broccoli soup, mushrooms, Sour Cream and salt and pepper to taste.
  3. When adding the White Chicken and Tuna, add the juice in the can too, and crumble the chicken and tuna.
  4. Add the cooked Sea Shell Noodles.
  5. Mix these ingredients thoroughly, and pour into a 9" X 13" casserole dish.
  6. Sprinkle the remaining Mozzarella over this, and sprinkle the bread crumbs lightly over the mozzarella.
  7. Cover with aluminum foil, bake for 50 minutes.
  8. Uncover and bake for another 10-15 minutes. Allow to cool for a couple of minutes before serving.
