Retro Noodles Romanoff

Noodles Romanoff was a popular dinner in the 60's and 70's, especially the pre-packaged kind, until popular brands stopped making the product. If you're still mourning the loss of the boxed meal, the good news is you can make it at home with almost as little effort. This recipe for Retro Noodles Romanoff will take you back with its creamy, cheesy sauce and crunchy bread crumb topping. We're sure the whole family will enjoy this budget-friendly weeknight meal. It's an old favorite when it comes to cheap casserole recipes.

Ingredients

  • 1 bag curly noodles, cooked as directed
  • 1 pint sour cream or less
  • 1/2 pound Velveeta, mozzarella, cheddar, or provolone cheese, grated
  • 3/4 cup milk or 1/2 cup milk and 1/4 cup heavy cream or half and half
  • 1/4 cup unsalted butter
  • onion powder, to taste
  • chives, optional
  • parmesan cheese, optional
  • bread crumbs tossed with a little melted butter, optional

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Heat the milk and butter.
     
  3. Gradually add the grated cheese stirring constantly until the cheese melts. Let cool-add the sour cream.
     
  4. Pour the cheese mixture over the cooked noodles and mix well.
     
  5. Sprinkle a little onion powder and chives into the mixture; pour into a buttered baking dish.
     
  6. If using bread crumbs, sprinkle them over the noodles. Parmesan cheese is also good mixed in with the bread crumb mixture.
     
  7. Bake uncovered for about 45 minutes.

Side dishes featuring pasta are delicious and easy to make. When making this, I would use rotini pasta, lite sour cream, reduced fat white cheddar cheese, and skim milk. Since this is a retro recipe, this would be interesting to make.
