Meaty Macaroni Bake has everything that makes casseroles so good. Simple to put together and budget-friendly, this hearty casserole recipe will be a family favorite. Make enough for seconds because you're going to want more.

  • 1 pound ground beef
  • 1/2 cup onion, minced
  • 1 (16-ounces) jar spicy spaghetti sauce
  • 1 can (4-ounces) mushroom pieces, drained
  • 6 ounces elbow macaroni, divided
  • 1 cup sour cream, divided
  • 4 ounces provolone cheese, sliced
  • 4 ounces mozzarella cheese, shredded
  1. Heat large skillet over medium-high heat; add beef. Cook, stirring, until brown and crumbly, about 5 minutes; drain fat.
  2. Add onion to skillet; cook for 2 minutes. Stir spaghetti sauce and mushrooms into skillet. Simmer, covered, for 5 minutes.
  3. Meanwhile cook pasta according to package directions; drain.
  4. Preheat oven to 350 degrees F.
  5. Spray baking dish with cooking spray. Layer half the pasta, half the sauce, and half the sour cream in prepared baking dish. Layer provolone cheese over top. Continue layering remaining pasta, sauce and sour cream. Top with mozzarella. Cover loosely with foil sprayed with cooking spray. Bake for 25 minutes; uncover. Bake 5 minutes longer.

This sounds like a delicious Italian pasta casserole that is quick and easy to prepare. Pasta dinners are always popular with the family so everyone should enjoy this. For this recipe, I would use lean ground beef, substitute the spicy spaghetti sauce with a milder variety of jar spaghetti sauce, include fresh sliced mushrooms, and use lite sour cream and low fat mozzarella cheese. The macaroni should be drained while it is still underdone because it will continue to cook in the oven. Then, the consistency of the pasta will be good in the casserole.
