Low fat Mexican Casserole

Low-fat Mexican casserole is low on fat and heavy on taste. It's the perfect recipe if you're attempting to eat healthy, but still want to enjoy a tasty Mexican dish.

Serves: 8

Ingredients
  • 8 ounces package of tricolor twist pasta
  • 1/4 cup chicken broth
  • 1/2 cup chopped green onions
  • 2 tablespoons cornstarch
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1 can fat free chicken broth
  • 8 ounces fat free Monterey Jack, shredded
  • 1/2 cup fat free sour cream
Instructions
  1. Preheat oven to 350 degrees F.
     
  2. Prepare pasta according to package directions, drain and set aside.
     
  3. Meanwhile, in medium nonstick saucepan, over medium heat saute onions in broth for 2 minutes, stirring constantly.
     
  4. Stir in cornstarch, chili powder and cumin.
     
  5. Using a wire whisk, gradually stir in broth until sauce is smooth.
     
  6. Raise heat to high. Bring sauce to boil, stirring constantly for 1 minute.
     
  7. Remove from heat. Stir in cheese until melted, then stir in sour cream and pour over pasta and toss well.
     
  8. Spoon into nonstick baking dish and bake for 15 minutes.

This is a meatless pasta casserole that offers a change from Italian pasta casseroles since it has Mexican food flavors. If you want to reduce the consumption of meat in your diet, this dish is what you are looking for. For this recipe, I would use reduced sodium chicken broth. I would also use lite sour cream and reduced fat cheese because they impart more flavor to the casserole than the fat free versions.
