  • 1 large red pepper, coarsely chopped (about 1 cup)
  • 1 large onion, coarsely chopped (about 1 cup)
  • 1 teaspoon dried thyme leaves, crushed
  • 1/2 teaspoon dried marjoram leaves, crushed
  • 1 box (6-ounces) seasoned long-grain and wild rice mix

This sounds like a casserole that would be good for a dinner at home or for a potluck. Sausage and rice is a winning combination that is sure to be a hit with everyone. For a healthier version of this recipe, I would use turkey sausage, reduced sodium chicken broth, and reduced fat cheddar cheese.
