Crispy Potato Delight

Crispy Potato Delight is simply delightful. Easy to cook and even easier to enjoy, your family will eat up this cheesy potato casserole recipe. Sprinkle corn flakes on top for an extra crunch.

Ingredients

  • 2 pounds package of frozen hashbrown potatoes or 5 cups diced potatoes, boiled, cooled
  • 1/2 cup melted butter
  • 1/2 teaspoon pepper
  • 1 can cream of chicken soup
  • 1 pint sour cream
  • 1/2 cup onion, grated
  • 2 cups Cheddar cheese, shredded
  • 2 cups corn flakes
  • 1/4 cup melted butter

Instructions

  1. Preheat oven at 350 degrees F.
     
  2. Mix all ingredients together except cheese in a 9 x 13 pan. Sprinkle cheese on top.
     
  3. Put over the cheese corn flakes and melted butter.
     
  4. Bake at 350 degrees for 45 minutes to one hour. Serve with grilled smoked ham slices, fruit, and bread or muffins.

This sounds like a very quick and easy recipe that would be good to serve when there is only a limited time available to cook. I would make a few changes to this recipe. When I make this, I would use fresh potatoes, substitute cream of mushroom soup for the cream of chicken soup, use lite sour cream and reduced fat cheddar cheese, and omit the corn flakes.

I will come back and rate it after I try it over the holidays. Seems like an excellent recipe for a potluck, and I'll bet it's easy to double it. Can't wait to make this one!
