Ingredients

  • 2 cups hot mashed potatoes (don't add any milk or butter to the potatoes)
  • 1 cup creamed cottage cheese
  • 3 tablespoons butter
  • 1 tablespoon chives, chopped
  • 3/4 teaspoon salt
  • 1/3 cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 325 degrees F.
     
  2. Combine potatoes, cottage cheese, butter, chives, and salt; mix thoroughly.
     
  3. Spoon into one-quart casserole dish. Heat uncovered for about 20 minutes.
     
  4. Five minutes before end of baking, sprinkle with Cheddar cheese.

Everyone in the family loved this Country Cottage Potato Bake which we made as a side dish for our dinner tonight. The cottage cheese and chives do wonderful things to the overall flavor. We added a little crushed fresh garlic and also some fresh grated parmesan into the cheddar cheese topping. Oh so good!

This would make a delicious side dish to accompany a main dish such as meatloaf. Creamy mashed potatoes are always a hit with everyone so this would also make a great dish to serve at a potluck. This is a good basic recipe that could be tweaked according to personal taste. I would use lite cottage cheese and reduced fat cheddar cheese when making this. Also, chopped garlic and ground black pepper would be good additions to the recipe. Crumbled blue cheese could substitute for the cheddar cheese, if desired.

I love cheese and potatoes together. I have never tried cottage cheese and potatoes, but what's not to love. It's cottage cheese and it's potatoes. I might add more cheddar cheese to the top, but I love my cheese. This is going on my to make list in the very near future.

I think cottage cheese is under rated and makes a good addition to many casseroles. It's a perfect fit to this potato and cheese casserole. You could add some cubed ham if you want it to be the main dish or just sprinkle bacon bits on top. If you like a crunchy top, sprinkle panko bread crumbs on the top!

You really can't go wrong with cheese and potatoes. And this dish didn't disappoint! It was the perfect combination of two of my favorite ingredients.

I love my potatoes to be cheesy, so these were definitely the potatoes for me. They were perfectly creamy and really complemented my other dishes. The only thing about this recipe that I would change is that I would double it to make more. I felt like they were gone too fast because there just wasn't enough.
