Chicken and Frozen Veggie Casserole

If you have frozen veggies and some chicken breasts, chances are you can make this easy casserole! Chicken and Frozen Veggie Casserole is a great go-to was one of my college staples! This frozen vegetable casserole recipe tastes great!

  • 2 cups white rice
  • 2 cups chicken broth
  • 2 cups hot water
  • 16 ounces package frozen vegetable medley
  • 2 pints boneless skinless chicken breasts, uncooked, diced
  • onion powder to taste
  • garlic powder to taste
  • salt to taste
  • pepper to taste


  1. In a large pot, combine rice, chicken broth, and hot water.  Stir to combine. 
  2. Layer the frozen vegetables on top of the rice, and the raw chicken pieces on top of the vegetables. Sprinkle the chicken with onion powder, garlic powder, salt and pepper. Cover, and bring to a boil. Let boil for 3-5 minutes.
  3. Stir, then reduce to medium/high heat, and cook for 10 to 15 minutes, or until rice is tender. Top with grated cheese before serving, if desired.
