"This chicken casserole recipe is a healthy recipe for the family. This yummy chicken casserole can be served both for lunch and dinner. The beauty of casseroles is that you can freeze them and eat them another day. Be sure to defrost your casserole completely in the refrigerator before you reheat it. This can take up to 2 days. You may add taco seasoning in when searing the chicken. The taco seasoning can be a great addition to the flavor. Also, you may add cooked rice to the dish for a complete one-pot meal. "

Ingredients

  • 1 tablespoon olive oil
  • 16 ounces chicken thighs or Chicken wings
  • 2 ounces onion
  • 2 cloves garlic
  • 1 ounce celery sticks
  • 4 ounces carrots
  • 2 ounces leeks
  • 8 ounces potatoes
  • 1 tablespoon plain flour
  • 20 ounces chicken stock
  • 2 rosemary sprigs
  • 1/2 lemon

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Heat oil in a large casserole.

  3. Season chicken pieces and brown all over for 10 minutes.

  4. Remove and set aside.

  5. Add the chopped onions, minced garlic, diced celery & carrots, chopped leeks, and diced potatoes to the pan.

  6. Stir and cook for 10 minutes.

  7. Stir in the flour and cook for 2 minutes.

  8. Then pour in the stock.

  9. Add browned chicken and rosemary sprigs.

  10. Squeeze over the lemon juice.

  11. Cover and bring to a boil and transfer to the oven to cook for 30 mins

  12. Season with salt and pepper to taste.
