Budget Friendly Potato Bake

Ingredients

  • 1/4 cup onion, finely chopped
  • 1 tablespoon margarine or butter
  • 1 tablespoon all purpose flour
  • 1/2 teaspoon salt
  • 2/3 cup reconstituted nonfat dry milk or milk
  • 3/4 cup (3-ounces) shredded American cheese or process cheese spread
  • 1 tablespoon snipped parsley
  • 2 teaspoons prepared mustard
  • 8 ounces frankfurters, sliced, (4 or 5)
  • 4 medium potatoes, cooked, peeled, and sliced
  • snipped parsley, optional

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. In small saucepan cook onion in margarine or butter till tender but not brown. Blend in flour and salt.
     
  3. Add milk all at once; cook and stir over medium heat till thickened and bubbly. Add shredded cheese, stirring to melt.
     
  4. Stir in 1 tablespoon snipped parsley and the mustard. Fold in sliced frankfurters and potatoes; turn into a 1 quart casserole.
     
  5. Cover and bake in for about 35 minutes or till heated through. Garnish with additional snipped parsley, if desired.
